My friend. The Crockpot.

Ever feel this way? Me too!

Feeding a family of 7  fast food after ballgames gets expensive (and old) and since we have three playing ball right now, there are a lot of nights when we have to eat dinner at 5pm (before a game) or at 7pm (after a game.) This is when my crockpot love comes in. I have a few simple recipes with easy ingredients to share with you guys that either
A. don't like to cook
or
B. just not home and need a quick meal when you do get home with hungry kids.

I want to say I am not doing this because I think I am a great cook or know better than anyone else how to feed my family. I do think that a lot of the time cooking isn't the hard part  of meal prep..it is the planning of the meals that trip people up.

These dishes are usually served with rice, mashed potatoes ( try the Bob Evans already made ones if you really want a short cut. They are really good and super easy) or over toast/biscuits.

I have been thinking about doing this for a while, but here is the thing...I am not a very detailed cook. As in my recipes are a little more pinch of this and a pinch of that.. a blob of this and a glump of that. BUT they turn out pretty good even if they don't taste the same way twice. ;)  I am sure you will catch on to my dump and cook methods  and see a pattern emerge if you keep following along this post,

Sooooooo get your crock pot and your grocery list ready and tell Chickfila  & Micky D's you are not breaking up, you just need more balance in your relationship and lets cook!

Sweet and Sour Chicken

4-6 frozen boneless skinless chicken breast
3/4 cup of sugar
6 T of ketchup
2T soy sauce
1 t. garlic salt
1 can of diced pineapples
1 T of corn starch
Place your frozen chicken in the crockpot.  mix everything else up in a bowl except the pineapples. Add to the chicken and cook on low 4- 6 hours or all day. Right before serving, drain your pineapple juice into a cup. Dump the pineapples into the crockpot. Then mix 1 heaping tablespoon of corn starch with your pineapple juice. Mix well and pour into the chicken mixture. { If you don't want to use pineapples just mix about 1/2 cup of water with the cornstarch }  Stir and watch it thicken before your very eyes.

Serve over steamed rice and broccoli. If you eat a lot of rice and don't already have one, I would recommend you buying a rice cooker. I lived approximately 38 years without one and I am not sure how. It is used at least twice a week.

Pork and Peas (This recipe was an accident because I didn't have the right ingredients on hand and had to substitute, but we liked it so much, it became a keeper.) ( Don't be afraid of Cream of Celery soup..it tastes nothing like celery)

1 package of boneless pork chops
1 can of cream of celery soup
1 can of water
Dump and cook all day. S & P to taste. Right before serving, shred the pork into the soup to make a meaty gravy. Serve over rice or over toast My side dish for this is usually with green peas.... Thus the name Pork and Peas.

BBQ Chicken

4-6  Boneless skinless frozen chicken breast
1 bottle of bbq sauce ( OR I cup of ketchup and 1 can of coke)
Dump and Cook all day, shred before serving and serve on buns (if desired.) Usually paired with baked beans and slaw,

Beef tips ( Super easy, yet fancy enough for company)

1 package of beef round steak  or stew beef
1 can of golden mushroom soup
1 can of water

Dump and cook all day. Serve with mashed potatoes. Perfect with green beans, corn & rolls or biscuits.

* You can double this one (or just use your leftovers) and.....

Beef Stroganoff the next day

save the meat and gravy from your beef tips.
Add 1 can of cream of mushroom soup, a few shakes of worcestershire sauce and a few heaping spoonfuls of sour cream. Heat together and serve over egg noodles for great beef stroganoff.

Italian Beef
I large beef roast or london broil roast
1 can of beef consumme'
1 package of italian dry dressing mix
1 package of Au juis mix
1 cup of water
Mix everything except the meat and pour over the meat in the crockpot, Cook on low all day. Slice or shred.

My family likes as opened faced roast beef sandwiches. With toast or rolls, mashed potatoes and then the meat and gravy. You can also slice it and serve it as your meat with other veggies.

SB Chicken ( SB is my moms initials because this is her easy recipe)

4-6 boneless skinless chicken breast
1 family size can of cream of chicken soup
1/2 the can of water

Dump and cook all day. Shred the chicken. Boil and package of egg noodles and combine with the chicken for yummy chicken and noodles or serve it over rice. I usually serve this with lima beans and apple sauce.

Taco Baked Potatoes  ( Perfect for a Meatless Monday Meal)

Wash, prick with a fork all over and foil however many potatoes you need. Place them in your beloved crockpot. Cook on low all day. When you arrive home. Warm up a can or two of refried bean and set out taco fixings your family likes. Set up a taco bar with potaoes and fill the potatoes with yummy goodness.

Meatball Subs

1 bag of your choice of frozen meatballs
1 jar of your favorite spaghetti sauce
Dump and Cook on low/warm all day ( Depends on how hot your crockpot is...I do this on warm because the meatballs are already cooked and low makes them overcooked and mushy)

Serve on hot dog buns with Parmesan cheese. and usually with gator tots or chips and dip.

Salsa Chicken

4-6 frozen boneless skinless chicken breast
1 can of cream of chicken soup
1 jar of salsa

Dump and cook all day on low. Shred chicken. Serve over rice. Sides are usually black beans and corn.

Roast with potatoes and carrots
Rump roast
10 carrots sliced
5 potatoes diced
1 onion sliced
1 cup of water
S & P to taste
Dump and cook all day ( if you are doing this for Sunday lunch, start the night before)
Serve with green beans and corn

* After the meal, cube  or shred your leftover meat, dump the leftover corns and green beans in the crockpot with the main dish, add a family size can of tomato soup. Place your crockpot in the fridge and tomorrow take it out and place on low all day for some fabulous vegetable beef soup for dinner. Usually served with grilled cheese sandwiches.

There ya have it!!

10 ( maybe 11) super easy crockpot meals to help you out on days when you are simply not home until dinnertime.

Happy New Year!

I cannot believe it is 2015! We had a great holiday here at The Mullis Life! Wayyyy busier than I could keep up with, but with 5 kids that is how we roll!

My big 4 started back to their Co-op today and Sarah Faith is back preschool, so we are back to mostly normal. I am training hard for the WDW Princess Half Marathon on Feb.22. I am super excited about it and after watching all the WDW Marathon photos on social media from this weekend, I am also dreaming about the Dopey Challenge next January.

A few other exciting things going on that I will be sharing by the end of the week, but for now I will leave you with our Family Christmas Photos. Much love blogger friends!

Chicken Pie update ( And a way to pay! )

Thank you guys so much who have bought chicken pies the past week! I am at 66 pies sold right now and my goal is 75 so if you would like to buy one, please let me know! The deadline to order is this Thursday Oct. 16th.

The majority of you guys like your chicken pies veggie free and I am right there with ya!  I did order one with vegetables just to give it a try and see what I think.

If you have ordered and still need to pay, I would like to collect the money by this Wednesday night if possible. I have made it easier with a pay pal link on the top right side of this page. If you don't want to do paypal and I won't see you before Wednesday, just send me a message and I will arrange to collect it when I drop off your pies.

There is also the option of a "Virtual Pie". You can just donate the $36 to Noah's Light via pay pal. Since the pies come frozen and cannot be shipped,  my boys said I could go ahead and order a pie for anyone that lives too far away and they would just eat it for you! :)  Always ready to help, those boys of mine!  Or maybe you dislike chicken pies, this might be a good option for you to still help.

Virtual pie = helping Noah's Light AND it is calorie free! :)

Thanks again for all those that are helping and encouraging me towards my goal!

Princess Half 2015!

Last year when I broke my heel after training for months for the Princess Half,  I have to say I was so disappointed. I know God has a reason for everything and that I was not supposed to run last year and even though all that training and planning was not a waste, the end still wasn't what I was hoping for or expecting.

Since then, I have kept up with running and even have ran a few 5k's ( once I started to heal up) but I had this nagging thought that I didn't finish what I started out to do. Run a half marathon. I even looked at signing up for a few half marathons but there is something in me that really really wants that first 13.1 to be at Disney  (My happy place!) I have just not had the motivation to run more than once or twice a week and even then a 2 mile run was all I would accomplish and at a slow pace.

This weekend, I posted a picture of this time last year on Facebook and how I was sad I didn't have that motivation to run right now and wished I had signed up in July for the Princess Half. My dad texted me and told me that he would pay my registration if I wanted to run! He knows I have been struggling to get back into the running grove and knew that the Princess Half in front of me would be the perfect motivation!

Soooooooooooo  ( Lord willing and NO jumping off bunk beds! ) I am running in the Disney World Princess Half February 22, 2015!  I am running with the team from Noah's Light Foundation. They are a charity that helps to fund research for pediatric brain cancer. I would LOVE it if you would go to my fundraising page and consider giving a donation to help me meet my goal. I will keep you up to date with all my training and fundraising progress on here, FB and Instagram.

Official Training starts TOMORROW! 9/30/14

School this year!

Hey guys! Man, have we had a busy 8 weeks!. I just started my 10th ( What???!!) year of homeschooling. My kids are all busy with activities and school again. Here is their first day of school pics.

Abigail is in 11th grade and is taking 4 classes at High Point Home Educators on Mondays. She is also in Dual Enrollment at Forsyth Tech and taking 2 classes ( Art Appreciation and US History) there on Tuesdays and Thursday. If all goes as planned she will graduate from High School the same time she graduates with her associate degree from Forsyth Tech.  She is planning to play basketball again for the Carolina Cougars, is active in our church youth group and is thinking about taking a 9 month mission trip with The World Race after graduation next year.
Nate is a 9th grader this year and is also Taking 4 classes with HPHE. He is in a Bible class on Thursdays and does Literature at home with me. He is on a local swim team and is playing guitar in church and for youth group. Micah is in 8th grade and also takes classes with HPHE on Monday as well as working on reading at home with me. He is in Bible class as well and is playing Varsity Soccer with the Forsyth Home Educator Hawks.

Essie is in 6th grade, takes classes on Monday at HPHE, Bible with us on Thursdays and is doing math and reading/Lit at home with me. She is still modeling and taking classes to improve her movements in front of the camera and the runway. She wants to also take a cake decorating class this winter.

Miss Sarah Faith is in preschool this year at Piney Grove and LOVES it! She asks every day if it is a school day. So happy she has found a place that she enjoys and feels safe at.

So What's The Deal? ( With my hair)

* If you are scrolling through blogposts looking for some sort of deep theological discussion or my thoughts on the depths of social injustice and depravity in our current world then you might want to just skip on along because this blog post would not be it. *

So... What is the deal with my hair that I feel the need to write a whole blogpost about it?

Well, for the few who are actually interested I thought I would blog my experiences with the keratin treatment that I had on Friday.  It was an extreme enough difference to make someone I have known for 6 years actually introduce themselves to me at church, so yeah...it was kinda a big deal around here  (to me) and I have had a few questions about it, so I thought I would memorialize the event in blog form and answer some questions along the way....

I have thick, dry, naturally tight, curly hair that is beginning to grey, so it is also colored. ( I feel as though hair dye and antibiotics fall in the same category. God allowed man to make one so I wouldn't die and the other so I wouldn't grey. ) :)

The social worker that did our homestudy 4 years ago came to our house with hair very similar to mine and then when she came back for our post placement visit, her hair was perfectly straight and super shiny.  I had to ask about it and she told me it was a keratin treatment and that it lasted about 5 months, decreases your hair drying time and tames all frizz!

I was hooked so I started checking it out and realized it was WAY out of my price range to have done. I kinda filed it in the " wish I could do this one day" file ( sort of like teeth whitening and an Alaskan cruise) and didn't really give it much more thought.

Fast forward to this year and I have a friend who is in school to be a hair stylist and I have discussed with her a few times coming in and letting her trim/color my hair. She started posting on fb that she was now certified to do keratin treatments and some of the before and after photos of her clients and I knew this was my time to have it done ( since she is in beauty school, the cost is a fraction of what it is in a salon)

Sooooooo Friday I made my whole afternoon free to go have her color, trim AND keratin treat my hair.

My before photo in the car. My hair is a box dye and I didn't like the brassiness that is had to it. Also. the frizz is real.

I went with a dark mocha color....probably darker than I have ever had. I like it about 85% right now. ( I don't think I have ever made a hair decision and been 100% pleased)  I sort of think I should have waited for fall to be this dark.... but its ok. I don't dislike it...and sometimes I love it....so there. Its hard being a girl .
Here is my before and after. I love how shiny it is.

The kicker is you are supposed to wait 3 days before you wash it, put it up in a clip or pony tail or even put sunglasses on your head to keep it from denting. So I was really good all day Saturday and then Sunday I tried to flat iron it a little more and went to church. Between the dark color and the straight hair I got LOTS of comments. Some good, some" I miss your curls"... ya can't please them all.  ;)

Well, by Sunday night I was missing my curls too! I got a little panicked about my hair being straight for 5 months and decided that I would go for a run Monday morning and then shower.... about 12 hours earlier than I was supposed to. So I did ( using the keratin complex shampoo) and then I styled my hair normally the way I do for curly hair. I was very thankful to see that my curls were very much still alive, just smoother, less frizzy and softer.

So.. Tuesday, I decided to experiment and see how it would look straightening it on my own. I washed it, dried it and used my chi flat iron. It didn't take nearly as long as normal to achieve straight hair and it stayed straight all day even though it was super humid outside,

So today is Wednesday and I didn't wash it , instead I took my large barrel curling iron and put some waves in it. I like this look a lot too.

So there ya have it! My adventures with a keratin treatment so far! I think if you had naturally straight hair it would be great for smoothing and you wouldn't even need a flat iron. I am SO glad that I still have my curls, because I know I would miss them ( and so would a lot of people apparently, because that was the comment I heard the most) but I am glad I have a doable option for straightening in the summer ( normally I only straighten my hair in the winter)

Would I do it again?
Yes.... It has made my hair tamer no matter the style I chose.

Will I do it again?
I dunno. If it lasts 5 months then it will be winter and my curls behave pretty well in cool dry air, so maybe next summer? We will see.

So whatcha think? Straight, curly or waves? Which one do you like best?
